Feather Roll muffins [24-30] (Delma Gomes)
2 cups scalded milk
1 yeast cake

¾ tsp salt
2 eggs well beaten
½ cup butter
3 to 4 cups flour
  1. Add the butter, sugar and salt to the scalded milk. Leave to cool.
  2. When lukewarm, add the yeast cake and when dissolved, add the eggs and enough flour to make a dough that is stiffer than cake dough.
  3. Beat thoroughly and then cover and let rise until light.
  4. Fill buttered muffin pans 2/3 full. Let rise until the pans are full.
  5. Bake for 30 minutes in a moderately hot 375F/190C oven.
