Pastitsio (Fay Anne de Freitas) |
2 tbsp oil 2 onions finely chopped 1 lb minced meat 1 ½ oz tomato puree 1 oz margarine
| 8 oz macaroni Pinch of cinnamon Pinch of thyme Pinch of nutmeg
| 1 oz flour 15 fl. oz milk 3 oz grated cheese 5 fl. oz natural yoghurt

- Preheat oven to 375F – gas mark 5.
- Warm the oil and fry the onions until brown.
- Add the meat and tomato puree and stir with a fork to prevent lumps.
- Sprinkle with the seasonings and allow to cook for a few minutes, stirring occasionally and adding beef stock if dry.
- In another pot, cook the macaroni and then drain thoroughly.
- Prepare a white sauce with the milk, margarine and flour and remove from the heat.
- Stir in to the white sauce half of the grated cheese and yoghurt.
- Line a large flame-proof dish with the macaroni pasta.
- Cover the pasta with 1/3rd of the sauce, cover with the meat, and then pour on the remaining sauce. Sprinkle the remaining cheese over the top.
- Bake in the oven for 45 minutes.
- Serve with salad and French bread.
