Pineapple Delight (Gene Watkinson)
1 cup canned crushed pineapple
1 cup macaroons

1 cup marshmallows
1 cup dates pitted/diced
1 cup whipped cream
  1. Cut the marshmallows into quarters and mix with the pineapple, crumbled macaroons, and diced dates.
  2. Let stand for several hours in the chiller.
  3. Fold in the whipped cream and chill again.
  4. Serve in sherbet or parfait glasses, topped with Maraschino cherries, rubyettes or nuts.
